Cooking with wild herbs
Where? Vallarsa
When?
A day to live the experience of “foraging”, the ancient art of gathering wild herbs and flowers.
Vallarsa is a river valley of the Valli del Leno excavated by the stream of the same name, embraced to the south-west by the Small Dolomites and to the east by the Pasubio massif.
A land that still today remembers its history and peasant traditions handed down from generation to generation, among which the ancient art of picking flowers and herbs for domestic use stands out.
In the company of an expert local guide you will be able to walk through the fields and meadows of this valley and stop from time to time to recognize and make a small collection of some of its most precious natural treasures: dandelions, “bruscandoli”, chicory and many other spontaneous herbs.
Step by step you will reach Maso Covel, an organic mountain farm where Cristina and Fabrizio grow vegetables, fruit trees, aromatic herbs and fragrant flowers to prepare their homemade products: essential oils, tomato purée, apple juice, jams, dried aromatic herbs and much more.
Depending on the herbs and flowers gathered, you will cook together a dish capable of encompassing all the flavors of this territory such as, for example, a “risotto” or an “Erbazzone”, a delicious focaccia with wild mountain herbs.
