The project"},"content":{"rendered":"<h2>A network project to strengthen, showcase and preserve our food and wine heritage<\/h2>\n<div class=\"desc\">\n<p>Traditional cuisine is a <strong>heritage<\/strong> of knowledge passed down from generation to generation. Throughout history, it has highlighted and made use of the local natural and agricultural resources available, giving rise to a simple cuisine based on just a few ingredients. Today, this heritage inspires creativity, research and new culinary experiences, not only for hoteliers and restaurateurs but also in our own homes.<\/p>\n<p>The project &#8220;<strong>Conosci, vivi, gusta. Sei in Vallagarina \u2013 A scuola di territorio<\/strong>&#8220;, proposed by <a href=\"https:\/\/www.asat.it\/\"><strong>ASAT<\/strong><\/a> \u2013 Associazione Albergatori ed Imprese Turistiche della Provincia di Trento, in collaboration with Azienda per il Turismo Rovereto Vallagarina e Monte Baldo, <a href=\"https:\/\/www.alberghierorovereto.it\/\"><strong>IFPPA<\/strong><\/a> \u2013 Istituto di Formazione Professionale Provinciale di Rovereto, Associazione Ristoratori and Confesercenti del Trentino, aims to involve all the local stakeholders (producers, wineries, hoteliers and restaurateurs) who wish to take part in a team effort to develop and promote new, unique and high-quality experiences that bring together the worlds of local agricultural and food products, wine, restaurants and hospitality. By transforming traditional dishes into modern, gourmet creations developed by the Institute&#8217;s young chefs, the project seeks to strengthen and, at the same time, preserve <strong>Vallagarina&#8217;s food and wine heritage<\/strong>.<\/p>\n<p>A new experience and a true journey through the local food and wine scene, where creativity meets flavour, featuring ingredients sourced 100% from the local area: from the vegetables of Val di Gresta to mountain cheeses, from the marroni of Castione to the buckwheat of the Leno Valleys, from wild mountain herbs to the meats and cured meats produced in the valleys using age-old techniques, and from bread to wines from local wineries.
