The adventure begins in the heart of the mountain hut, surrounded by the sound of cowbells and the crisp air of Passo Borcola. You will have the opportunity to observe every stage of the process up close, following step by step the magic of milk being transformed under the expert guidance of the cheesemaker:

• The secrets of curd formation: you will learn about the properties of fresh milk, understand the importance of temperature, and discover the precise moment when the magic of rennet takes effect.
• The art of cheesemaking: you will observe the cheesemaker’s skilled movements up close, from breaking the curd to collecting it in traditional linen cloths before placing it into moulds.
• Time for questions: throughout the demonstration, you will be free to talk with the cheesemaker and ask questions to satisfy your curiosity about production techniques and life in the mountain pastures.

The experience does not end with the secrets of cheesemaking. Before leaving the mountain hut, you will have the opportunity to visit the farm shop and purchase Malga Borcola’s traditional products.
