A project dedicated to promoting the local area, designed to raise awareness of local products through an experience centred on food and wine, promoted by ASAT – Associazione Albergatori ed Imprese Turistiche della Provincia di Trento, in collaboration with IFPPA – Istituto di Formazione Professionale Provinciale di Rovereto, Azienda per il Turismo Rovereto Vallagarina e Monte Baldo, Associazione Ristoratori and Confesercenti del Trentino.
A new experience and a true journey through the local food and wine scene, where creativity meets flavour, with ingredients sourced 100% from the Vallagarina area: from the vegetables of Val di Gresta to mountain cheeses, from the marroni of Castione to the buckwheat of the Leno Valleys, from the wild herbs of our mountains to the meats and cured meats produced in the valleys using age-old techniques, from bread to wines from local wineries.
Discover the recipes, centred around the principles of local heritage, biodiversity and sustainability and reinterpreted with a modern twist by the Institute’s young chefs, to explore all the flavours passed down through our families from generation to generation.
